Weekending: The One With Halloween

Guys, this weekend was fantastic. Why? Because it involved a Halloween party. I cannot resist Halloween. This year Ivan and I dressed up as Bugs & Lola from Space Jam. I have to say, it was one of my favorite costumes I’ve done so far.

We went to a bar in DC with some friends and had an absolute riot. We haven’t gone out much since the wedding (we’ve been trying to save money) so it was nice to have a night out with friends. We got home somewhere around 2:30 in the morning, which gave me an epically slow start on Saturday.

Once I finally got moving on Saturday, I went and got my grocery shopping done. Then I did some prepping for the week because we were out of a ton of staples. I made a batch of Instant Pot Noosa, roasted carrot hummus, chipotle verde salsa & a batch of homemade granola. I also made chickpea & potato curry with homemade naan for dinner. It was a busy day in the kitchen. But I’ve got a ton of prepping done now, so the week should be super easy.

Saturday night we headed over to our friends apartment to watch the ASU game. It didn’t start until 10:30(ish) so we didn’t make it through the whole game. I was pretty tired from the day before and so we left at around halftime.

Sunday we celebrated my friend Lauren’s birthday with a brunch in Old Town Alexandria. We went to Virtue Feed & Grain and we were both really impressed with the place. I had brioche french toast and it was absolutely divine.

After bunch I made two batches of bagels – everything and salt. I made them for the first time a few weeks ago and they were SOOOO good. I froze most of the bagels this time (cut in half and separated with foil) so we can just throw them in the toaster when we want them. I’ve never buying store bought bagels again. They are so much better homemade. Plus, the were really easy to make – they just take some time. I also assembled a few yogurt parfaits for the week. I used the homemade noosa, granola and homemade lime curd, berry compote & beach preserves for the different fruit bottoms.

I capped the night off with a few episodes of Stranger Things season two. I haven’t gotten to far into it, so please, all you binge watchers, no spoilers!

All in all, it was a fun weekend. I got a lot of prep work done in the kitchen, we got to see a number of our friends and I got to dress up for Halloween. Can’t beat that.
